One thing the founders did get right is to not establish our government as a democracy. What did Franklin say to that woman who asked what kind of government we got?

What were the drafters' thoughts on democracy?

No, they didn't. Us adopting a democracy over time is our ignorance, it's not their lack of foresight. We're good at this nowadays, willfully not following the blueprint and blaming the architect when the building collapses.

The Constitution doesn't need change right now, it needs to be tried.

In my opinion the objectives you seek cannot be achieved using the Citizens Assembly. But they can be and more using the Wisdom Council Process. See this chart contrasting the two: https://www.wisedemocracy.org/citizens-assembly-vs-wc-process.html
